Every year from late November to March we collect olive oil crop, which we grow with respect and care.
Generally speaking, "olive oil" is simply the oil that's obtained from the fruit of olive trees. In itself that sounds pretty simple and straightforward. But there are different varieties of olive oil that are set apart not by the type of olive that's used, but the process used to extract the oil, as well as by the additives, and the oil's level of free oleic acid.
Olive oils can vary drastically in taste and quality, and color is only one factor and not the distinguishing one. Olive oil is graded by its level of acidity, or free oleic acid. The amount of free oleic acid in olive oil indicates the extent to which fat has broken down into fatty acids.
What is Extra Virgin Olive Oil?
Extra virgin is the highest quality and most expensive olive oil classification. It should have no defects and a flavor of fresh olives. It must be produced entirely by mechanical means without the use of any solvents, and under temperatures that will not degrade the oil.
It's not easy to produce extra virgin olive oil. A producer must use fresh olives in good condition and monitor every step of the process with great care. Extra virgin olive oil doesn't stay that way: Even in perfect storage conditions, the oil will degrade over time, so it's important to enjoy it within its two-year shelf life.
